When we think of kheer, traditional rice kheer and vermicelli kheer first come to our mind. How about introducing your taste buds to a new flavor that is also healthy for your body? Try making bottle gourd or bottle gourd kheer. It is an everyday vegetable found in most Indian households and has many benefits and can be included in our daily diet without the risk of conditions like diabetes, weight loss, healthy heart, kidney diseases, liver diseases etc. Could Undoubtedly it is a super vegetable with a content of almost 90% water, few calories, almost no fat, high fiber and a ton of minerals.

We have put together an easy Lauki ki Kheer recipe that you can try this summer and meet your sweet kheer cravings in a healthy way:

Ingredients needed to get started: Grated bottle gourd – 1 cup; milk, 2 cups; Cardamom powder – 1/2 tsp; chopped dried fruits – 1 tbsp; Desi ghee – 1 tsp; Sugar – 1/2 cup.

Here is what you need to do:

First of all, peel and grate the bottle gourd and keep it aside in a bowl.

Pour milk in a pan and heat it on medium heat. When the milk starts boiling, switch off the flame, just once or twice.

Take another pan, heat desi ghee in it, then add grated bottle gourd to the melted ghee and cook till it becomes soft.

Add hot milk to the pan when it reaches the right level of softness. Don’t forget to keep stirring. Keep cooking it on low flame. The milk should thicken properly to indicate that the kheer is cooked properly. After this add sugar and cardamom powder as per taste. At this stage, add some chopped dry fruits and mix well. Cook the kheer for 3-4 minutes, so that the sugar dissolves well in the kheer. After this, turn off the gas and serve in a bowl. Garnish dry fruits on top of this dish. If you don’t want to use dairy milk, you can substitute it with almond milk as well.
