There is a growing demand for gluten-free food in India and this is all due to intolerance to gluten, which is a type of protein that acts as the glue to hold food together. It is found in grains such as wheat, rye and barley, and is used to make popular foods such as cakes, pizza, cereals, cookies, crackers and of course pizza!

Due to the increasing cases of celiac disease, people are opting for gluten-free foods. According to Mordor Intelligence, “The Indian gluten-free foods and beverages market is projected to be valued at USD 189 million in 2024, registering a CAGR of 8.7 per cent.” This clearly shows how people are choosing gluten-free products like bakery products and cereals. The report also noted that “India is the second fastest growing market for gluten-free foods and beverages in the Asia-Pacific, after China.”

Keeping this trend in mind, we thought of making a pizza whose crust is completely gluten free. The best part about this pizza is that there is no need to knead the dough! This pizza is really going to taste amazing paired with your favorite vegetarian cheese. Here’s how you can make gluten-free vegetarian pizza at home.

for the dough

3 cups gluten free all purpose flour

1 tbsp active dry yeast

1 tablespoon olive oil

2 tablespoons unrefined cane sugar

1 cup hot water

1 tsp sea salt

1/2 tsp baking powder

300 ml Homemade Pizza Sauce

1 cup dairy free cottage cheese

mixed vegetables, for topping

Method

1. First let the yeast rise to knead the dough. For this take a bowl and mix yeast, lukewarm water and sugar in it. Let it sit for 5 minutes.

2. Now sieve all purpose flour, salt and baking powder in a large bowl. Once done, add olive oil along with the yeast mixture to it and mix well. Knead a soft dough by adding little water.

3. After this, make dough balls with your hands. Take a baking sheet, sprinkle some gluten-free flour on it. Keep the dough in the center and roll it completely by pressing it with your hand.

4. Place the flattened dough in the oven and bake for 8-10 minutes or till it cracks.

5. Once done, take it out and spread the pizza sauce on the crust. Make sure you leave a gap of 1/2 inch from the edges.

6. Lastly, grate or shred the dairy-free cheese on the pizza crust. Later, add vegetables of your choice as a topping and grate more cheese on it. (Tip: If you like a dark crust, you can brush the pizza crust with a little olive oil before baking.)

7. Now put this crust in the oven again and bake for about 20-30 minutes. Make sure you check it after 20 minutes to prevent burning.

8. If the pizza is cooked, take it down and let it cool down a bit. Season it with thyme and black pepper and serve hot with ketchup.
