Chana Masala Almond

Ingredients                                                

Almonds (blanched & Peeled) – 60g

Sliced onions – ½ onion

Ginger strips – 1 tsp

Green chilli strips – ½ tsp

Olive Oil – For cooking

Cinnamon stick –  1 small piece

Channa Masala – 1 tbsp

Method:

-In a kadhai, sauté the onions, ginger, and green chilies in oil.

-Next, add the cinnamon stick and channa masala, and season to taste.

-Finally, incorporate the almonds into the mixture and mix well.

Nadru aur Badam ki Seekha

Ingredients:

Almond (sliced) – 80 g

Lotus Stem – 300 g

Green chilies – 4

Ginger – 5 g

Garlic – 10 g

Roasted chana flour – 30 g

Salt – to Taste

Boiled potato (grated) – 80g

Cottage cheese (grated) – 50g

Green cardamom powder – 3g

Mace powder – 2 g

Brown onion – 50g

Oil – 50 ml (for shallow frying)

Mawa (khoya) – 20 g

Method: 

-Begin by cleaning and washing the lotus stem. Then, cut it into thin slices and blanch them in boiling water for a few minutes.

-Once blanched, drain off the water and fry the lotus stem slices until they turn golden brown. Set them aside.

-Make a paste out of the fried lotus stem slices and set it aside.

-In a mixing bowl, combine grated cottage cheese, boiled potato, and all the spice powders mentioned in the recipe.

-Mix the ingredients well to ensure that all the spices are evenly distributed throughout the mixture. Also, add saffron water to the mixture.

-Form the mixture into tikkis (patties) of desired size.

-Top each tikki with sliced almonds for added flavor and texture.

-Heat a non-stick pan with a very small amount of oil.

-Cook the tikkis in the pan until they are golden brown and crispy on both sides.

-Once cooked, serve the tikkis hot with mint chutney on the side.

Tip: If you prefer, you can also use the same mixture to make stuffed Nadru Kishikhampur kebabs by stuffing them with seasoned hung yogurt before cooking.

Almond, Sweet Potato and Pomegranate Chaat, White Pea Ragda

Ingredients:

Almonds (peeled) – 15 g

Boiled sweet potato dices – 30 g

Pomegranate pearls – 5 g

White pea – 20 g

Onions chopped – 5 g

Tomatoes chopped and deseeded – 5 g

Chaat masala – 2 g

Green chillies – 1 g

Lemon juice – 3 ml

Coriander, fresh – 1 g

Mint chutney – 10 ml

Saunth chutney – 15 ml

Red chilli powder – 1 g

Method:

-Boil white peas until cooked thoroughly to prepare white pea ragda.

-Mix chopped onions, tomatoes, green chilies, fresh coriander, lemon juice, red chili powder, and chaat masala in a bowl. Adjust seasoning as needed.

-In a separate bowl, combine almonds, pomegranate pearls, and sweet potato. Drizzle with saunth chutney, lemon juice, chaat masala, and chopped coriander. Lightly toss the mixture.

-On a serving plate, shape the white pea ragda and place the almond chaat on top. Garnish with a coriander sprig before serving.

Paneer badam ki tikki

Ingredients:

Paneer – 2 cups

Potato boiled & mashed –1/2 cup

Oil – 2 and 1/2tbsp

Jeera – 1 tsp

Green chilly chopped – 2 tsp

Ginger chopped – 2 tsp

Turmeric –1/2tsp

Red chilli powder –1/2tsp

Coriander chopped – 2 tbsp

Almonds chopped –1/2 cup

Cornflour -1 tbsp

Salt – 1 tsp

Method:

-Mash the paneer and mix it with the potato.

-Heat oil in a pan and add jeera. Once it crackles, add the ginger and green chilly. Toss them for a few seconds and then add the turmeric followed by the paneer-potato mixture.

-Add red chilly powder and salt. Toss for 2-3 minutes and then remove from the flame.

-Spread the mixture out on a tray and allow it to cool completely. Then, add cornflour and chopped coriander.

-Shape the mixture into round and flat patties. Spread chopped almonds on a plate and roll the sides of the patties in the almonds. Keep aside.

-Heat the remaining oil in a pan and cook the patties on both sides until brown.

-Serve hot.
